Broccoli Kraft Mac Casserole


 Ingredients:
2 boxes of Kraft Mac and Cheese
1/2 c. milk
2 Tbs. butter
salt and pepper
1 large head of broccoli, cut into bite size pieces
shredded cheddar cheese

Cook the pasta according to the directions on the back of the Mac and Cheese box. Drain well and set aside. While the pasta is cooking, add about 2 Tbs. olive oil to the bottom of a medium sized skillet and set to medium-high heat. Add the broccoli, and make sure you "brown" it slightly to get that crunchy and slightly toasted taste. Reduce the heat to medium and continue to cook the broccoli for about five more minutes. In a small saucepan, add the butter and both cheese packets, and cook on medium-high heat. When the butter is almost fully melted, add the milk. Stir together and keep stirring frequently for about 3-5 minutes, or until the sauce is the thickness and consistency that you would like it to be. Add the noodles to the skillet that the broccoli is in. Pour the sauce over the noodles and mix everything until well combined. Season with salt and pepper. Grease a casserole dish with non stick cooking spray, and pour the casserole mixture into the dish. Top the casserole with about 1- 1 1/2 c. of shredded cheddar ( I did a mixture of white and "yellow"). Do not cover the dish. Set the oven to broil, and broil the casserole for about 5 minutes, or until the cheese starts to melt and get slightly crunchy.
