Strawberry Jam Pastries


 Ingredients:
1/2 pkg. Phyllo dough, thawed
1 jar Strawberry Jam (or whatever flavor jam you prefer)
1 large egg yolk, beaten
1 Tbs. lemon juice
1/3 c. powdered sugar

Preheat oven to 375 degrees. Line a cookie sheet with parchment paper and set aside. Unroll the Phyllo dough and cover with a kitchen towel so that the sheets don't dry out. Taking two sheets of Phyllo dough at a time, cut down the middle lengthwise. On one corner of the sheet, add 1 Tbs. of strawberry jam. Start with the side that has the jam, and fold upward making a triangle shape. Continue folding in triangles until you get to the end of the sheets. Spray the end with Pam cooking spray, and fold over sealing the edge. Place on the parchment paper. Continue this process for the rest of the Phyllo sheets. Brush each triangle with the beaten egg yolk. Bake in the oven for 10 minutes. Let cool fully on a wire rack. Combine the powdered sugar and lemon juice in a small bowl. Drizzle over the cooled pastries and sprinkle with decorating sugar (color of your choice). Let the frosting cool fully before storing the pastries in an air tight container. (When the frosting is dry, they will not stick together if overlapped in the container.)
