Corn Dog Mini Muffins


Ingredients:

1 c. flour
1 c. cornmeal
1 Tbs. baking powder
6 Tbs. Better'n Eggs egg product
1/3 c. unsweetened applesauce
1/4 c. Splenda
1/2 tsp. salt
12 Hillshire Lit'l Smokies turkey sausages

Preheat the oven to 400 degrees. Spray two 12 mini muffin cup tins with non stick cooking spray, and set aside. Mix the flour, cornmeal, salt and baking powder in a large bowl with a whisk. Add the egg product, applesauce and sugar, and stir together until everything is well incorporated. Form into 24 balls and place into the muffin cups. Cut the Lit'l Smokies in half width wise. Stick a piece of sausage in the middle of each corn muffin ball. Bake in the oven for 10-15 minutes until golden brown. Remove from the tins and let cool fully on a wire rack. I topped each muffin with a mixture of equal parts of mustard and honey mixed together.   (Makes 24 mini muffins, 1 WW point per muffin.)
