Turkey Taco with Salsa Ranch Dressing
Ingredients:
6 tortillas, fat free
1 lb. Butterball ground turkey, 87% lean or more
taco seasoning packet
1 c. red bell pepper, chopped
2 green onions, minced
1 1/2 c. salsa (I used mild)
1 c. Kraft shredded cheese, reduced fat, Mexican style
1 c. mixed greens
2 Tbs. hidden valley ranch dressing
Combine 1/4 c. salsa with 2 Tbs. ranch dressing and set aside. In a large skillet at medium heat, add the peppers and onions and cook for 3 minutes. Add the ground turkey and continue to cook for 3-5 minutes, or until the turkey is cooked through. Add 3/4 c. salsa and the taco seasoning packet, and stir until everything is combined. Continue to cook for 1-2 more minutes. Place about 1/6th of the mixture on each tortilla shell. Top with shredded cheese, mixed greens, and the salsa ranch dressing. Yum! A filling AND healthier version of loaded tacos! (Makes 6 tacos, 7 WW points each.)
