Lemon Poppy Seed Cookies
Ingredients:
2 c. flour
1/2 tsp. baking soda
1 tsp. ground coriander
2 Tbs. poppy seeds
1 1/2 sticks butter, softened
1 c. sugar
2 egg yolks
1 whole egg
1 1/2 tsp. lemon extract
Preheat oven to 300 degrees. In a medium bowl, sift the flour, baking soda, coriander, and poppy seeds, and set aside. Beat the butter and sugar in an electric mixer on medium speed until the mixture forms a grainy paste. Then add the yolks, egg, and lemon extract. Scrape the sides of the bowl down if necessary. Beat at medium speed until light and fluffy. Add the flour mixture and mix at a low speed just until combined. Drop by rounded tablespoons onto an ungreased cookie sheet, 2 inches apart. Bake for 21-23 minutes until slightly browned. Immediately transfer to a wire rack to cool. Leave plain, or decorate!
