Apple Snack Cake



Ingredients:

3 1/2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
Pinch of salt
1 c. sugar
4 egg whites
4 medium sized apples, peeled cored and diced
1 1/2 c. applesauce, natural

Preheat the oven to 350 degrees. Spray a tube pan with non stick cooking spray. In a medium bowl, combine the flour, baking soda, cinnamon and salt. In an electric mixer, beat the sugar and egg whites until soft peaks form. With the mixer on low speed, blend in the apples and applesauce. Add the flour mixture and stir until just combined. Scrape the batter into the pan and spread in an even layer. Bake for about 55 minutes, until golden brown on the top. Cool in the pan on a wire rack for 10 minutes. Then invert onto the wire rack and cool another 20 minutes.
