Ingredients:
1 1/2 c. flour
1/2 c. wheat flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 tsp. vanilla
1 stick butter, softened
2 eggs
1 c. sugar
3 green apples, peeled and chopped
Preheat oven to 350 degrees. Mix the dry ingredients together in a large bowl and set aside (I use a whisk). In an electric mixer, blend together the softened butter, vanilla and sugar. Gradually add in the flour mixture. Add the apples and mix well. Line four mini loaf paper baking cups on a baking sheet. Pour the batter into the baking tins, about 3/4 full. Top each loaf with a sprinkle of cinnamon and coarse sugar. Bake for 40-45 minutes until a toothpick comes out clean in the center.

Did you forget a wet ingredient? My 'batter' currently looks like crumble topping with apples.
