Banana Cinnamon Crumb Cake



Ingredients:

2 c. flour
3 tsp. baking powder
1 tsp. salt
3 ripe bananas
1/2 c. margarine, room temperature
2 c. sugar
2 eggs
1 tsp. vanilla
1 c. milk, 1%

Crumb Filling:
1 c. margarine, cubed
2 c. flour
2 c. brown sugar
1 Tbs. cinnamon




Preheat the oven to 350 degrees. Spray a 13x9 inch pan lined with tinfoil, and set aside. In a medium bowl, sift the flour, baking powder and salt in a bowl. In a large bowl, mash the bananas with a fork until smooth. Add the sugar and margarine and mash together. Add the eggs and vanilla and combine well. Alternating, add the dry ingredients and the milk, and mix until combined.

In another medium size bowl, use a pastry blender to combine the flour, margarine, brown sugar and cinnamon. Pour 1/2 of the batter in the bottom of the sprayed pan and spread evenly. Sprinkle 1/3 of the crumb filling on top of the batter. Spread the batter on top of the crumbs, and then sprinkle the rest of the crumbs on top. Bake for 50 minutes. Cool on a wire rack. Serve warm, or let cool fully before eating.
