Maple-Mustard Roasted Carrots
Ingredients:
1/4 c. maple syrup
1 1/2 Tbs. olive oil
1 1/2 Tbs. stone ground mustard
1 Tbs. cider vinegar
1 1/2 Tbs. fresh thyme
2 Tbs. carrots, sliced diagonally
1/2 tsp. salt
1/2 tsp. fresh cracked pepper
Preheat the oven to 425 degrees. Line a large baking sheet with tinfoil. Spray with non stick cooking spray. Whisk the syrup, oil, mustard, vinegar and thyme in a large bowl. Add the carrots and toss to coat. Spread evenly on the baking sheet. Roast in the oven for 40 minutes, stirring after the first 20.
(Makes 2/3 c. servings, 4 WW points per serving.)
