Pistachio White Chocolate Cookies



Ingredients:


1 c. brown sugar
1/2 c. sugar
2 eggs
2 Tbs. vanilla
3/4 c. grapeseed oil
1 tsp. baking soda
1 tsp. salt
2 1/2 c. flour
1 pkg. instant pistachio pudding jello mix
6-10 drops green food coloring
2 c. white chocolate chips

Preheat the oven to 375 degrees. Line baking sheets with parchment paper and set aside. In an electric mixer, beat the sugars with the eggs until creamy and light in color. Add the vanilla and grapeseed oil and mix until combined. On low speed, add the salt, baking soda, flour and pistachio pudding mix. Add the food coloring until you get the color green that you want. Slowly mix in the chocolate chips. Using a heaping tablespoon, roll the dough into balls and place on the parchment paper 2 inches apart. Press down slightly on the top. I added edible red glitter in the center of each cookie. Bake for 8-10 minutes. Let cool for a few minutes on the baking sheets, and then transfer to let cool fully on a wire rack.
