Favorite Turkey Tacos Recipe


Ingredients:

1 1/4 lb. ground turkey, 98% lean
1 pkg. taco seasoning
1 green pepper, chopped
2 green onions, chopped
1/2 c. salsa, mild
lettuce
corn / flour tortillas
shredded reduced fat cheddar cheese
reduced fat Ranch dressing (or sour cream)

In a large skillet on medium low heat, brown the ground turkey. When it is almost fully cooked, do not drain, and add the taco seasoning, onion and chopped green pepper. Fill the empty taco seasoning bag  3/4 of the way full with water and add to the pan. Increase the heat to medium high and stir frequently, as the sauce gets thicker. Stir in the salsa.


To plate, place a few spoonfuls of the filling mix on top of your tortilla. Top with shredded cheese, lettuce and Ranch dressing (you can also add any toppings you want, like cilantro and sour cream, more salsa, etc.) The meat is very moist and this is a lot leaner of a taco version than using ground beef!
