Ingredients:
42 Oreos
4 pkg. cream cheese, 1/3 less fat
1 c. sugar
1 tsp. vanilla
1 c. soy/almond milk (original or vanilla flavored)
1 c. light sour cream
1/4 tsp. salt
Heat the oven to 275 degrees. Line cupcake tins with paper liners. Place an Oreo in the bottom of each cup and set aside. In a large bowl, beat the cream cheese with an electric mixer. Add the rest of the ingredients and beat until well combined.
Divide among the cups. Bake for 11 minutes, rotate, and bake for 11-14 more minutes. Let cool fully on a wire rack and refrigerate before eating. These things are addicting!
