Leftover Mashed Potato and Gravy Patties


This is one of those recipes where you pull an episode of chopped and find ingredients that are going to go bad unless you use them right away, and find somehow to mash them all together. In this case literally! I hate the feeling when I throw out leftovers that you may be sick of, but if you change them into something different they take on a whole new form. And sometimes end up tasting even better than the original version!

Ingredients:

2 c. deli leftover mashed potatoes and gravy
2 celery sticks, chopped
3/4 c. reduced fat shredded cheddar cheese
2 c. loose spinach, chopped
1 tsp. garlic salt
1/2 tsp. fresh cracked pepper



Preheat a skillet to medium heat. In a medium sized bowl, mix all of the ingredients together with a spatula. Form the mixture into 6 patties. Spray the skillet with non stick cooking spray and place the patties in the pan. Cook for 5 minutes on one side, check to make sure the bottom is golden brown, and then flip over to cook the other side for about five minutes.You are just re-heating everything so don't worry about checking the  middle for if they are done or not.
