Zucchini Bread



3 eggs
1 3/4 c. sugar
1 c. oil
1 tsp. vanilla
1 tsp. coffee extract
2 c. zucchini, grated, water squeezed out
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 tsp. cinnamon
1/4 c. cinnamon sugar mix

Preheat the oven to 325 degrees. In an electric mixer, combine the eggs and sugar for two minutes until light and fluffy. Add the oil, vanilla, and coffee extract. On low speed, add the remaining ingredients (minus the cinnamon sugar mix) and spread evenly into 3 prepared loaf pans (I used disposable baking pans that do not need to be greased). Sprinkle the cinnamon sugar mix on top of each evenly. Bake for 50-55 minutes or until a toothpick inserted in the center comes out clean.
