Black and White Pound Cake



Ingredients:

3 c. flour
2 tsp. baking powder
1 tsp salt
2 1/2 c. sugar
1/2 c. cocoa powder
6 Tbs. water
5 eggs
1 1/2 c. margarine, melted and cooled
2 tsp. vanilla
1/2 c. almond milk, vanilla

Preheat the oven to 350 degrees. In a medium size bowl, combine 1/2 c. of sugar, cocoa powder and water together until well combined. Set aside. In an electric mixer, beat the margarine and remaining sugar together. Slowly add the eggs, one at a time. Add the flour, baking powder and salt. Finally, add the vanilla and milk. Scoop 2 cups of the light batter into the chocolate mixture and mix by hand until well combined.

Spray your bundt pan with non stick cooking spray. Alternating colors, add the chocolate and vanilla mixture to the pan, baking sure that you add an even layer in a complete circle around the pan. Bake for 55-60 minutes in the oven. Let cool for 15 minutes, then transfer out of the pan onto your serving tray (make sure you really spray the bottom of your pan so that the cake comes out nice looking.....I wasn't so lucky...). After it cools slightly, slice and serve.
