Boot Print Cookies
The Main Ingredients:
1/2 c. margarine, melted
3/4 c. brown sugar
1/2 tsp. vanilla
1 1/4 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. oats
For the Strawberry Yogurt, add 1 c. chopped dehydrated strawberries and 1 c. yogurt baking chips.
For the Almond Coconut, add 1 c. slivered almonds, 1 c. shredded coconut, 1/2 c. chopped crystallized ginger and 1/2 tsp. almond extract.
Preheat the waffle maker. Meanwhile, mix the above ingredients together for either of the two recipes. Spray the inside of the waffle maker with non stick cooking spray and pour 1/4 of the batter into the molds. Close and cook for at least 1 minute, or until the tops are golden brown. Remove and let cool while doing the rest.
To finish the strawberry ones, let cool fully and dip the top in powdered sugar.
To finish the almond coconut ones, melt semi-sweet chocolate in a double boiler and either spoon on top or dip the top into the melted chocolate.
I made both kinds, some as snowy boot prints, and some as muddy boot prints :-) This recipe is too cute!
