Turkey Cheddar Egg Cups

6 eggs
6 slices deli turkey (I used Hillshire Farm)
1/4 c. spinach, fresh
1/4 c. Sargento reduced fat cheddar cheese (or 6 tsp.)
salt and pepper

Preheat the oven to 350 degrees. Spray 6 muffin tins with non stick cooking spray. Line each muffin cup with a slice of deli turkey. Place 3 or 4 spinach leave on the bottom. Crack an egg into the center and season with salt and pepper. Sprinkle each egg cup with about 1 tsp. of cheese. Bake for 16-18 minutes or until the yolk is set (bake less if you want a runny yolk).

(Makes 6 egg cups, each cup worth 3 WW points.)
