Cinnamon Roll Cream Cheese Blondies






Ingredients:

1 1/2 stick margarine, room temperature
3/4 c. brown sugar
2 eggs
1 tsp vanilla
2 c. flour
1 tsp. baking powder
1 1/2 tsp. cinnamon
2-3 c. chopped cinnamon roll pieces
4 oz. reduced fat cream cheese, cubed





Preheat the oven to 350 degrees. With an electric mixer, beat the margarine and brown sugar together until well combined. Add in the eggs and vanilla. Slowly add the dry ingredients and then turn the speed back up until everything is mixed well. Add in the cinnamon roll pieces (this part is also nice because the roll pieces remove everything from the edges of the bowl). In an 8x8 or 9x9 baking pan, line the inside with tinfoil and spray with non stick cooking spray. Divide the dough in half and press the first half into the bottom of the dish evenly. Scatter the cream cheese cubes on top of the dough. Press pieces of the leftover half of the dough over the cream cheese and then fill in the gaps with the rest.






Bake in the oven for 30-35 minutes. The middle might still look raw, but do not over bake!! Remove from the oven and let cool 10 minutes. Using the tinfoil, lift out of the pan and let cool fully on a wire rack. Cut into small squares (only about 1/3 of them are shown in the picture below). Refrigerate until a half hour before serving.
