Roasted Smashed Red Potatoes


Growing up my grandpa turned me into a potato-holic. I haven't met many kinds of potato that I didn't like, or how they were prepared for that matter. If you love roasting vegetables and want to try something new for a potato side dish, this is definitely a recipe for you.

Ingredients:

8 medium red potatoes
Garlic salt
Dried basil

Preheat the oven to 450 degrees. Line a baking sheet with tinfoil, spray with non stick cooking spray and set aside. Cut each red potato in half width wise, and boil on medium-high for 7-10 minutes until fork tender (don't cook them too long or they will be very mushy). Place a potato half on the prepared tinfoil and using the bottom of a glass, press the potato down slowly until it slightly mashes. Repeat for the remaining potatoes. Spray the tops with non stick cooking spray and season with the garlic salt and dried basil. Bake for 20-25 minutes until the bottom of the potatoes are golden brown.
