Cheese Stuffed Shells


1 box Jumbo Shells pasta
1 jar of your favorite pasta sauce
shredded Mozzarella
1 large container of small curd cottage cheese
1/8 c. parsley
1 egg
1 c. grated Parmesan cheese

Cook noodles as directed on package. Preheat oven to 375 degrees. In a large bowl, combine cottage cheese, parsley, egg, grated Parmesan, and 1 c. Mozzarella. When the noodles are done, strain and let cool slightly. On the bottom of a 13x9 pan, pour enough pasta sauce to cover the bottom so the noodles do not stick. Fill each shell with the cheese mixture so that they are fully stuffed. Repeat until all the noodles are filled. Place on top of the pasta sauce in the pan, and pour the rest of the sauce over the noodles. Top with the remaining Mozzarella cheese and cover with foil. Bake 45 minutes. Remove tinfoil and bake 10 more minutes.
