Apple Spice Cupcakes


Ingredients:

1 1/2 c. flour
2 tsp. cinnamon
1 tsp. ground nutmeg
1 tsp. baking soda
1 tsp. salt
3 large apples (or I used 6-8 small apples from my tree)
1 1/2 c. sugar
2 large eggs
1/2 c. veggie oil

Preheat the oven to 350 degrees. Chop apples into small pieces, and leave the skin on. Combine the dry ingredients in the mixer to combine. To the dry ingredients, add the eggs and oil. Mix until combined, but do not over mix. The dough will look thick like cookie dough. Stir in the apples.

Line mini muffin tins with muffin cups. Fill 3/4 of the way up with the apple dough. Bake in the oven for 23 minutes. Let cool before removing from the muffin tins. This recipe makes about 4 dozen.

These were soooooo good. I was in the mood for something like this, with the changing seasons and colder weather. They really hit the spot! Next time I will probably make them regular cupcake/muffin size so that I'll only have one at a time...not six. Haha! Thanks for the recipe, my family loves them :)
