Breakfast Quesadilla


Ingredients:
2 tortilla shells
2 eggs
1/2 c. shredded cheddar
salt and pepper
1/4 tsp. Smoked Paprika

Heat skillet to medium-high heat. Cook the eggs on one side. Flip the eggs over, break the yolk, and cook that side. Season the eggs with salt, pepper and the smoked paprika. Slide eggs onto a plate and set aside for the time being. Place one tortilla down on the skillet. Spread 1/4 cup cheese on the tortilla. Wait until the cheese looks most of the way melted. Slide that side off to the side. Repeat with the other tortilla and place the egg on top of the cheese. Put the other tortilla back on top of the egg and press together. When all the cheese is melted through, Take off of the stove and cut into four pieces.
