Open Face Egg Burrito


Ingredients:
1 egg
2 green onions, chopped
2 pieces of oven roasted turkey, sliced into pieces
1 slice of Swiss cheese, cut into pieces
1 tortilla shell
Salt and Pepper

Heat a pan on medium-high heat. Spray the pan with non stick cooking spray. Break the egg into the pan and season with salt and pepper. To the top of the egg (while it is still runny) add the green onion and turkey, and make sure it is in the runny white part of the egg. Flip the egg over to cook the other side. Sprinkle half of the Swiss cheese on the top of the egg. When the bottom side is cooked, flip the egg over one more time (yes the cheese side will end up cooking and the cheese will become crunchy on the bottom). Sprinkle the rest of the cheese on the side of the egg that is up again. Turn the heat off. Slide the egg off onto a tortilla shell. Pick up like a taco, or roll it up like a burrito and enjoy!
