Crai-Sun Pumpkin Muffins


Ingredients:
2 c. flour
3/4 c. sugar
3 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/2 tsp. salt
1 1/2 c. canned pumpkin
1/2 c. canola oil
2 eggs
1 c. Craisins
1/2 c. Sunflower seeds

Heat oven to 400 degrees. Line 12 regular sized muffin cups with baking cups. In a large bowl whisk all of the dry ingredients together. Fold in the wet ingredients until all combined. Stir in the Craisins and Sunflower seeds. Evenly distribute between the 12 muffin cups. Bake for 20 minutes. Spread some butter in the middle for breakfast, or add a scoop of vanilla ice-cream for dessert!
