Ingredients:
1 c. granulated sugar
1/2 c. Crisco
2 eggs
1/2 tsp. baking soda
1 tsp. baking powder
1 c. fresh pumpkin puree
1/4 tsp. salt
1/4 tsp. ground cinnamon
1/4 tsp. ground ginger
1/4 tsp. ground nutmeg
1 3/4 c. cake flour
1 c. semi-sweet chocolate chips
Preheat oven to 350 degrees. Mix the wet ingredients in a blender until fully combined. Add the dry ingredients and mix just until combined. Do not over mix! Stir in chocolate chips. Grease a square 8 inch pan. Pour the batter into the prepared pan. Bake for 40 minutes, or until toothpick inserted comes out clean (if it goes through chocolate, you will see the brown chocolate on the toothpick!) Cool 10 minutes before removing from the pan. Cool on wire rack.
I decided to put these in individual wrappers so that I could take a batch to work. Looks delicious even when cut up into squares!
