Ingredients:
15 small cooked frozen cocktail shrimp
2 tsp. soy sauce
1 can pineapple chunks
8 finger limes
1/4 c. chopped fresh cilantro
8 romaine lettuce leafs
Place the frozen shrimp in a bowl and soak in warm water for about 10 minutes. Place on a paper towel to drain some of the water off. Remove the tails and cut each shrimp into about four pieces. Place in a small pan with the soy sauce on medium low heat and cook. Meanwhile cut the pineapple chunks into small pieces, and put into a small bowl. Add the fresh cilantro. Remove the 'lime caviar' from inside the finger limes and add to the bowl. Mix the ingredients well. When the shrimp is slightly brown from the soy sauce, remove from the heat and cool. Rinse the romaine lettuce under water and let dry on a paper towel. Place the romaine leafs on a serving tray. Spoon the pineapple mixture onto the leafs. Add the soy shrimp. Enjoy!
