Nancy and Barbara's Banana Bread

 

When I was little my sister and I went to daycare, and we have so many fond memories even to this day of going there. Nancy and Barbara who ran our daycare are like extended family to us, and they always made the best snacks! One of the most memorable is their famous banana bread. It is moist and soft, and the aroma when you bake it makes you instantly relaxed and comforted. This is the only banana bread that I crave and if you decide to try it, I bet you will agree!

Ingredients:

2 eggs
2 c. sugar
1/2 c. oil
3 bananas, very ripe, mashed
2 1/4 c. flour
1 tsp. baking soda
1/2 tsp. salt

Preheat the oven to 350 degrees. Mix together the eggs, sugar, oil, and bananas in an electric mixer until smooth. Add the flour, baking soda and salt and combine just until everything is mixed together. Spray four mini loaf pans (or omit if using the paper mini loaf baking cups that are already lined) and divide the batter evenly, or so that the pans are 2/3 full. Bake for 35-40 minutes. Remove from the pans and let cool on a wire rack (or leave in the paper baking cups and let cool fully).
