Smoked Turkey Tortilla Pizza


I was over at my parents house and my mom and I were trying to figure out what to make that was quick using smoked turkey. We came up with a really odd concoction but it tasted wonderful so I thought I would share it, even though it doesn't look very pretty!

Ingredients:
1 c. shredded smoked turkey breast
2 avocados, peeled, pitted and chopped
1/2 medium sized cucumber, peeled and chopped
1/4-1/3 c. shredded cheddar cheese
2 tortilla shells
1/2 tsp. Mrs. Dash Original Blend seasoning

Heat a skillet on medium low heat. Place your tortilla on the skillet and add half of the cheese. When the cheese is melted, remove the tortilla shell from the heat and set aside. Repeat for the other tortilla shell. Mix the avocado and cucumber together. Add half of the mixture to each of the tortilla shells. Sprinkle the turkey with the Mrs. Dash and mix with your fingers. Add half of the turkey to each of the tortilla shells. I topped them with a celery leaf. Serves 2.
