Wild Orange Chicken Salad

Ingredients:
1/4 container of concentrated orange juice (thawed)
2 cooked chicken breasts, shredded
1/2 zucchini, skin peeled
1/2 cucumber, skin peeled
3/4 c. cooked wild rice
1/2 green pepper, sliced thin
Salt and pepper

Add the orange juice concentrate to a saucepan and cook on medium-low heat until the concentrate becomes a thin sauce (about 5 minutes). Set aside to cool. Take a potato peeler and use that to cut the zucchini and cucumber into thin strips in a medium size bowl. Add the shredded chicken, wild rice, and green pepper and stir together. Add salt and pepper to the concentrate and pour over the salad. Toss to coat.

This salad was a great way to use up items in the refrigerator! I served it on a few Romaine hearts.
