BBQ Grilled Cheese

Ingredients:
2 chicken breasts, boneless and skinless
1/2 c. Baby Ray's BBQ sauce
1 c. shredded cheddar cheese
4 slices of white bread
Spreadable butter

In a medium sized pot, fill half way with water and set on high heat. When the water is boiling, add your chicken breasts. Boil for about 7-10 minutes until the center of the chicken is no longer pink. Let sit for about 3 minutes to cool slightly. With two forks, shred the chicken. Place the chicken in a saucepan. Heat on medium heat. Add the BBQ sauce to the chicken and stir to mix. Heat chicken through again until the BBQ sauce is hot. In a large skillet, heat on medium heat. Spread one side of each piece of the bread with butter. Lay two of them butter side down in the pan. Add 1/4 c. cheese to each slice. When the cheese looks about half way melted, add your chicken. Top with another 1/4 c. cheese, the other slice of bread (butter side up) and flip the sandwich over. Heat through until all of the cheese is melted.
