Blueberry Snack Cake

Ingredients:
2 c. flour
1 1/2 c. sugar
1 stick butter or margarine
1 tsp. baking powder
1 c. milk
2 eggs, separated
2 c. fresh blueberries


Preheat oven to 350 degrees. In a bowl combine flour and sugar. Cut in the butter with a pastry blender until well combined. Set 1 c. to the side for a topping. Add the baking powder, milk and egg yolks to the mixture with a spatula until well combined. In a different bowl, whisk the egg whites until bright white and foamy, doesn't have to be perfect stiff peaks as long as they are somewhat stiff. Pour into a greased 13x9 pan. Sprinkle the blueberries, and then the leftover batter on top. Bake for approximately 30 minutes.
