Caramelized Onion Crostini


Ingredients:
Ciabatta, thinly sliced
Olive oil
2 small onions, peeled, cut in half, and thinly sliced
1 Tbs. brown sugar
1/4 c. water
1 Tbs. balsamic
1 tsp. salt
Block of Parmesan cheese

Set oven to broil (high). Place the sliced Ciabatta on a baking sheet and drizzle with olive oil (garlic infused if you have it to give it that extra boost of flavor!). Broil for approximately 3-5 minutes, or until Ciabatta is crispy and slightly golden. Set aside and let cool. Meanwhile, heat about 1 Tbs. olive oil in a medium sized skillet on medium heat. Add the onions and cook for 15 minutes, stirring occasionally. Add the brown sugar, water, balsamic and salt, and continue to cook for 5-7 minutes, or until all of the liquid has absorbed into the onion. Set aside to cool slightly. Place the Ciabatta on your serving platter. Top with the onion mixture. Use a vegetable peeler to shave some Parmesan on top, or shave some thicker slices and chop into smaller pieces.
