Spinach Potato Casserole


Ingredients:
4 potatoes, shredded
1 pkg frozen spinach, thawed and drained
6 jumbo eggs, whisked
1 Tbs. garlic salt
1/2 tsp. pepper
1 c. shredded Parmesan cheese

Preheat oven to 375 degrees. Spray a quiche pan with Pam. Mix the spinach and potatoes and add to the quiche pan. Whisk the eggs, garlic salt and pepper together and pour over the potatoes. Top with the Parmesan cheese. Bake for an hour in the oven. Cool before cutting.
