Breakfast Taco Pizza
Ingredients:
2 flatbreads
2 slices of bacon, cut in half
4 eggs
salt and pepper
1 1/2 c. raw broccoli, chopped
2 green onions, chopped
1 1/2 c. shredded Taco cheese
1 tomato, chopped
Cook the bacon in a medium sized skillet. When cooked, place on paper towel to cool. In a medium sized bowl, whisk the eggs together. Season with salt and pepper. Stir the veggies in with the egg. Pour into the same pan with the bacon grease. On medium heat, stir the eggs and vegetables frequently, until the eggs are fully cooked. Place the flatbreads on a baking sheet. Spray with non stick cooking spray. Divide the egg mixture in half and place on the flatbreads. Top with the shredded cheese. Set the oven to broil. Heat the breakfast pizzas in the oven for about 3 minutes. Top with the chopped tomato before serving.
