Gingerbread Muffins



Ingredients:
1 stick melted butter
1/2 c. sugar
1/2 c. molasses
1/4 c. milk
2 eggs
2 c. flour
2 Tbs. cocoa powder
2 tsp. ground ginger
1 tsp. baking soda
1/4 tsp. salt

Preheat oven to 350 degrees. Mix all of the wet ingredients together with a whisk. Fold in the dry ingredients, and be sure not to over mix. Divide the batter evenly among 12 paper lined muffin tins, and bake in the oven for 20-23 minutes. Let cool slightly before serving.
