Chocolate Cheesecake Cupcakes

Happy Birthday to my Hubby!


Ingredients:
8 oz. fat free cream cheese, room temperature
1/4 c. Egg Beaters, original
1/3 c. Splenda
1/2 tsp. vanilla extract
Half box of Sugar Free Devil's Food cake mix
3/4 c. Sprite Zero
1/2 c. mini semi-sweet chocolate chips

Preheat oven to 350 degrees. Line a muffin pan with cupcake liners. In an electric mixer, mix the cream cheese, egg beaters, Splenda and vanilla extract until everything is smooth (it may take a minute or two on medium speed). In a medium size bowl, whisk the cake mix with the Sprite. Evenly divide the cake batter in each cup. Dollop with the cream cheese mixture, and then using the back of the spoon spread the cream cheese mixture slightly. Top with the chocolate chips. Bake for 22-24 minutes in the oven. Cool slightly on a wire rack before serving. (I doubled the recipe and made 24 cupcakes instead of 12. Each cupcake is 4 WW points.)
