Coca-Cola Cupcakes with Salted Peanut Butter Frosting



Ingredients:

1 c. Coca-Cola
1/2 c. 100% pure cocoa powder
4 Tbs. butter, cut into slices
1/2 c. sugar
1/4 c. brown sugar
1 c. flour
1/2 tsp. baking soda
1 tsp. salt
1 egg

Preheat oven to 350 degrees. Line a cupcake pan with cupcake liners. In a small saucepan on medium heat, combine the soda, cocoa and butter, and stir until the butter is fully melted. Add the sugars and whisk until dissolved. Remove from the heat and let cool. Whisk the egg in a small bowl, then whisk the egg into the liquid cocoa mixture. Sift the dry ingredients into a medium size bowl. Pour half of the liquid mixture into the dry mixture, and stir until combined. Add the remaining liquid mixture and mix until most of the lumps are out. Divide the batter between the 12 cups. Bake for 23-25 minutes, and let cool fully on a wire rack.

Frosting:

4 c. powdered sugar
2 sticks butter, room temperature
1 c. creamy peanut butter
1/2 tsp. salt
2 Tbs. milk, 1%
sea salt

Beat the powdered sugar, butter, peanut butter and salt with a whisk attachment until smooth and fluffy. Add the milk and whisk until combined. Pipe on top of the cupcakes, and sprinkle each with a small pinch of sea salt.
