Oreo Surprise Chocolate Cookies


Ingredients:

2 sticks butter
2 c. sugar
4 eggs
1/4 c. milk, 1%
2 tsp. coffee extract
3 1/3 c. flour
2/3 c. cocoa powder
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
24 Oreos, reduced fat

Preheat oven to 375 degrees. Line two baking sheets with parchment paper and set aside. In an electric mixer, cream the butter and sugar together until fluffy. Add the eggs one at a time. Beat in the milk and coffee extract. Sift the dry ingredients together in a bowl. Slowly add the dry ingredients to the wet until everything is just mixed. Refrigerate the dough for a half an hour. Spray hands with non stick cooking spray and grab about 3-4 Tbs. of dough. Flatten the dough in your hand, and place an Oreo in the center. Fold the dough around the Oreo and seal tight. Place on the parchment paper. Repeat for the remaining cookies, placing 2 inches apart. Bake for 13-15 minutes. Transfer to a wire rack and cool fully.
