Make-your-own Wonton Taco


Ingredients:

1 pkg. wonton wrappers
1 lb. lean ground turkey
1 pkg. taco seasoning
1 bag shredded lettuce (or lettuce cut up fine)
Cilantro
1 bag reduced fat shredded cheddar cheese
Sliced black olives
Ranch Dressing, light

Preheat the oven to 350 degrees. Place a wonton wrapper in each cup of a cupcake pan. Bake for 5 minutes, or until the bottom is golden brown. Repeat for the rest of the wontons (I only ended up using about 45 wonton wrappers). Meanwhile, in a medium sized skillet, cook the ground turkey on medium heat. When the turkey is no longer pink, add the taco seasoning (you don't need to drain the meat). Let the turkey cool slightly.

To assemble: Place the wontons on a serving tray. Add the shredded lettuce, a few pieces of cilantro, about 1 tsp. shredded cheddar, and about 1 tsp. of the turkey taco meat. I had the ranch dressing and the olives on the side for people to add themselves, but you can always add the olives on top and a dab of Ranch dressing.
