HA' Penny's


Ingredients:

1 c. flour
1/2 c. margarine, softened
1/2 lb. reduced fat sharp cheddar cheese
1/2 envelope onion soup mix
1/2 tsp salt

Mix the flour and margarine with an electric mixer. Add the remaining ingredients and mix with your hands. Form into 1/2 an inch thick logs and wrap in tinfoil. Freeze for several hours or let refrigerate overnight. Slice 3/8 thick and place on a baking sheet lined with parchment paper. Bake for 10-15 minutes at 350 degrees. Let cool fully before storing. These crackers are good while warm, but when they are fully cool they have that crunch factor.




This recipe was out of a cookbook that I made when my great Aunt Jean passed a few years ago. Sometimes I would get a bag of these for Christmas and it was really hard to make them last for a few days. I love them!
