Spinach and Feta Casserole



Ingredients:

3 c. brown rice, cooked
2 (8 oz.) pkg. frozen spinach, thawed and drained
2 eggs
1/2 c. milk, 1%
1/4 c. sliced green onions
1 tsp. dried thyme
1/2 tsp. salt
1 tsp. Worcestershire sauce
1 c. crumbled feta cheese
3/4 c. Parmesan cheese, divided
1/4 tsp. pepper (fresh cracked)

Preheat the oven to 350 degrees. Spray a 2-3 quart casserole dish with non stick cooking spray. Combine the above ingredients together, minus 1/4 c. of the Parmesan cheese. Spread evenly into the casserole dish and bake for 35 minutes covered. After 35 minutes, remove the cover (or tinfoil) and sprinkle with the remaining Parmesan. Bake 10-12 minutes more until the cheese is melted.
