Whiskey Beef Pot Roast


Ingredients:

3 lbs. lean beef bottom round roast (I used two 1.75lb. pieces)
1 tsp. allspice
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. ground cloves
1 c. Jack Daniel's Tennessee Honey Whiskey, divided
1/2 c. fat free chicken stock
2 garlic cloves, minced
2 whole bay leaves
1/2 c. brown sugar
1/4 c. lime juice

Combine the allspice, salt, pepper and ground cloves. Rub on all sides of the meat. Place the meat in the bottom of the slow cooker. Add 1/2 c. rum, the chicken broth, garlic and bay leaves. Cook on low for 1 hour. Combine the remaining whiskey, brown sugar, lime juice and pour over roast. Cook on low for 4-6 hours, basting occasionally.Remove the roast and cover with tinfoil. Let rest for about 10-15 minutes before slicing, and then add back into the sauce until it is time to serve.
