Pepper Spinach Hash
Ingredients:
1/2 large onion, diced
5 red potatoes, diced
1 orange pepper, chopped
2 tsp. chives
3 c. loose spinach
1 tsp. Paula Dean's house seasoning
1/2 tsp. fresh cracked pepper
Spray a pan with non stick cooking spray. Add the onion and potatoes and cook on medium low heat for 5-7 minutes, stirring frequently. Add the peppers and spinach and continue to cook for 5 more minutes with a lid on the pan (this helps steam the spinach slightly and adds moisture). Season with Paula's house seasoning, chives and fresh cracked pepper.
