Sweet and Tangy Mustard Chicken



Ingredients:

4 frozen skinless chicken breasts
1 medium onion, sliced
6-8 small red potatoes
1 c. 98% fat free chicken broth (low sodium)
3 Tbs. sweet and tangy mustard
Juice of 2 lemons
zest of 1 1/2 lemons
2 Tbs. dried oregano
1 tsp. salt
1 tsp. pepper
Fresh chives (garnish)

Layer the potatoes and onions on the bottom of a slow cooker. Place the chicken breasts on top. Whisk the remaining ingredients together and pour over the chicken. Cook on low for 6-7 hours (or high 4-5). Sprinkle each serving with fresh chives.
