Ham and Cheddar French Toast Sandwich


This is another one of those recipes that you look in the refrigerator and go...."I have NO idea what to make for dinner tonight", which usually happens when you haven't grocery shopped in a while... My husband doesn't care too much for French toast, and I absolutely love it. He loves grilled cheese, and I love cheese in general so even though this combination might sound really awkward together I promise that it tastes delicious! (On a gross side note, I would totally try dipping this in Maple syrup in the future.)


Ingredients:

2 Tbs. stone ground mustard
2-3 dashes of Frank's Red Hot Sauce
6 slices deli ham
3/4 c. shredded cheddar cheese, reduced fat
2 eggs
4 pieces of bread


Heat a skillet to medium heat. Whisk the two eggs in a shallow dish. Spray the skillet with non stick cooking spray. Dip each piece of bread into the egg, and make sure both sides are covered. Place on the skillet. When the side that is faced down is golden brown, flip over to cook the other side. In a small bowl, combine the mustard, hot sauce and cheddar cheese. Evenly disperse onto each piece of bread. When the cheese is slightly melted, Add the ham on top to two slices. Flip the other slices on top of the ham and press down with a spatula or something heavy. Cook on each side for a  minute longer just to make sure the cheese is good and melted.
