1 c. Egg Beaters, Egg Whites
1/4 c. taco meat
1/2 green pepper, seeded and chopped
1/2 c. reduced fat Colby-Jack cheese
Cook the eggs in a medium size skillet heated to medium low heat. As the egg whites start to cook, scramble and scrape from the edges with a spatula. When they are about done, add the green pepper and taco meat. Keep cooking until everything is heated through. Top with shredded cheese and mix again so that all of the cheese melts.
