Fried Chicken 'n' Slaw Pinwheels


1 1/2 c. Broccoli Coleslaw Mix, chopped
1 fried chicken thigh, meat and skin removed, chopped
1/8 c. reduced fat shredded cheddar cheese
3 Tbs. Parmesan Peppercorn Ranch dressing, Light (or Ranch)
1 container Crescent rolls

Preheat the oven to 375 degrees. Line a baking sheet with parchment paper. Meanwhile, in a small bowl, combine the slaw, chopped chicken and chicken skin, cheese, and dressing together with a spoon. On a flat surface unroll the dough out and divide into four rectangles. Spoon 1/4 of the mixture onto each rectangle and starting at the bottom of the dough (lengthwise) roll the dough up until the seam is at the bottom. Cut each roll into 8-10 slices and place on the parchment lined baking sheet. Bake for 9-11 minutes (the pictures show 11, but every oven cooks differently). Let cool slightly on a wire rack before serving.
