Breakfast Cups with Canadian Bacon and Cheese


Normally the style that I write out my recipes goes by ingredients first, then directions. However this one is going to make more sense if I write it out as part of the directions. So instead, I will do it this way.....

You will need:

Simply Potatoes, Southwest Hash Browns
All Whites, 100% Liquid Egg Whites (I used Crystal Farms)
Reduced fat shredded cheddar cheese
Frank's hot sauce (optional)
Canadian Bacon (pizza style, about the size of a quarter each)

Preheat the oven to 400 degrees. Spray each cup of a 12 cup muffin tin with non stick cooking spray (or line with baking cups). Press about 1/4 cup of the hash browns in the bottom of each cup, and bake for 5 minutes. Remove the potatoes from the oven. To each cup, add 1 1/2 tablespoon of the egg whites, a few dashes of hot sauce, one slice of Canadian bacon and 1 teaspoon of cheese. Bake again for seven minutes until the egg whites are cooked and the cheese is melted. Let cool slightly before serving.
