Hash Brown Waffles

Ingredients:

Simply Potatoes Southwest Hash Browns (or any style as long as they are hash browns)
Non stick cooking spray

Preheat your waffle maker. Wait until the light goes off and spray with non stick cooking spray. Scoop 2/3 of the raw potatoes with a measuring cup into each side of your waffle maker (if you have one large round one, use the same amount just spread out evenly). Close the top and latch, and cook for about 12 minutes or until the top is golden brown. *Hint, you will want to open the waffle maker to check, but do NOT even attempt to check until they have at least cooked for 10 minutes so that the top and bottom have that nice crunch. Remove from the waffle iron and let cool slightly before serving. These are great as a side dish with breakfast!

(If you use the Simply Potatoes brand and the Southwest Style hash browns, they are 2 points per waffle, or 2/3 cup.)
