Ingredients:
12 oz. dark chocolate chips
3 Tbs.butter
2 eggs
2/3 c. sugar
1 tsp. vanilla
1/3 c. flour
1/4 tsp. baking powder
Preheat the oven to 350 degrees. In a double boiler (or a glass bowl set on top/inside of a saucepan with a few inches of water), heat the water until boiling. Add half of the chocolate chips (6 oz.) and butter into the glass bowl. As they start to melt, start slowly combining together with a spatula. When the chocolate and butter are fully melted and combined, remove from the heat and let cool slightly.
Meanwhile, in an electric mixer with a whisk attachment, whisk the eggs, sugar and vanilla together on a medium-high speed for 9-11 minutes until the mixture gets a stiff consistency. On low, add the flour and baking powder until mixed. Slowly add in the melted chocolate and the remaining 6 oz. of chocolate chips. Let sit for 5 minutes for the batter to get stiff. Spoon (or use scoop) 1 Tbs. of the batter into a parchment lined baking sheet. Make sure you leave plenty of room for the cookies to spread (I had enough room for around 8 cookies per batch). bake for 8 minutes in the oven. Let cool for 15 minutes before removing from the parchment paper, and cool fully on a wire rack.
